Gluten-free lemon-almond muffins

Looking for a healthier treat? These delicious gluten free lemon almond muffins, created by naturopath Rosaria Nithart, include natural food sources of calcium and magnesium including Blackmores Origins Wholefood Calcium.

Why it’s good:

Calcium. Each scoop (2.5g) of Blackmores Origins Wholefood Calcium naturally provides 850mg of calcium
essential for healthy bones and teeth.

Preparation time: approximately 20 minutes

Quantity: approximately 35 mini muffins
Each muffin provides approximately
388mg of calcium from Blackmores
Origins Wholefood Calcium.

Ingredients:

  • Blackmores Origins Wholefood Calcium 40 g
  • Lemons 3
  • Caster sugar 150 g
  • Eggs 5
  • Almond meal 250 g
  • Gluten-free baking powder 2 tbsp

Option:
Add ¼ cup of poppy seeds to give a crunchier texture to the muffins.

Method:

  1. Wash and remove any stickers from the lemons. Place the three whole lemons in a saucepan and cover with
    water. Bring to the boil, reduce heat. Cover the saucepan and simmer for 1 hour, ensuring the lemons remain
    covered with water. Drain and cool.
  2. Create a lemon puree by chopping the lemons into quarters, discard any seeds, then place the chunks into a
    food processor or blender and puree until smooth.
  3. Preheat oven to 170 degrees Celsius.
  4. In a mixing bowl beat the eggs and combine the caster sugar until the mixture thickens. Add the lemon puree,
    almond meal, baking powder and Blackmores Origins Wholefood Calcium. Mix well by hand or in a food
    processor.
  5. Pour well combined mixture into a muffin pan and bake for 15-20 minutes (for mini muffins) or 30-35 minutes
    (for normal sized muffins) at 170 degrees Celsius.
