RECIPE: Wild blueberry vegan cheesecake

Vegan, dairy and wheat free....It's a cheesecake but not as you know it!

Wild blueberry vegan cheesecake



  • 1 cup almonds
  • 1 cup pitted dates
  • 1 tablespoon water


How to make

  • To make the base add the dates, almonds and water to a food processor and blitz until you have a crumbly mixture- set aside
  • To make the cheesecake place the soaked cashews, lemon juice, coconut milk, honey or preferred sweetener and blueberry powder into a blender and blend until smooth
  • To serve add a heaped spoonful of the base to each bowl or jar and press down. Divide the cheesecake mixture evenly between servings. To finish, serve topped with fresh berries and or mint leaves
