Mango & Avocado Grilled Fish By Pat Rafters

Tennis legend Pat Rafter shares his favourite recipe, one he describes as nice, light and tasty.


Ingredients

  • 2 cups (400 g) long grain rice
  • 4 fresh fish fillets of your choice
  • 1/2 mango, sliced
  • 1/2 avocado, sliced
  • 1/2 cup finely chopped coriander
  • Asian sauce of your choice
  • wok-seared vegetables of your choice, to serve

Method

1. Cook the rice according to packet directions. Meanwhile, grill the fish for 2-3 minutes each side, or until the flesh flakes easily when you test it with a fork. Try to time it so that the rice and fish are ready at the same time.

2. Spoon rice onto serving plates, and top with the fish, mango, avocado and coriander.

3. Drizzle sauce over the fish and rice and allow it to soak in.

4. Serve with the vegetables.

Q: I have two favourite things that my mum used to cook..

 

A: Pat Rafter – I really can't pick between the two. It would be either a beef stew with mash or apricot chicken.

 

Q: My first choice for a quick meal..

 

A: Pat Rafter – is either a biscuit if I'm watching television, or fruit if I am going to do a work-out within the next three hours. I have to keep very fit so I am lucky that I really like healthy snacks.

 

Q: My number one food weakness is..

 

A: Pat Rafter – I really would have a chocolate bar a day, and it's lucky that when you're training it doesn't matter. I couldn't live without some sweet treat during the week. Well, I could if I really had to, but why?

 

Q: Beer, wine or spirits?

 

A: Pat Rafter – My favourite drink hands down is… water! Hard to believe I know, but true!
