Christmas Rocky Road

Our Christmas rocky road is full of flavour, bursting with rich cranberries and pistachios. Stirring gingernut biscuits through antioxidant-rich dark chocolate adds a crunch and punch of festive fun! These luxe-looking logs are the perfect gift for children young and old, simply mix it all together, then slice into long slabs and wrap to decorate. The hardest part of the recipe is simply waiting for the slice to set!

Ingredients 

  • 400g 70% dark chocolate, chopped
  • ¾ cup natural crunchy peanut butter
  • ¾ cup reduced-sugar cranberries, roughly chopped
  • ½ cup pistachios, roughly chopped
  • 125g gingernut biscuits, roughly chopped
  • 3 cups marshmallows, roughly chopped

How to make

1. Line the base and sides of a 20cm x 30cm lamington pan with baking paper.

2. Place chocolate in a heatproof bowl over a saucepan of simmering water. Stir for roughly 5 minutes or until melted and smooth. Stir in the peanut butter. Remove the bowl from heat.

3. Add the cranberries, pistachios, gingernuts and marshmallows and fold to combine.

4. Spoon into the prepared pan and refrigerate for 1 hour to set. Use a sharp knife to cut the rocky road into 6 long logs. Each large log can be then cut into 6 smaller pieces.

Notes

Rocky road can be stored in an airtight container in a cool, dry place for up to one month.

This recipe can be made dairy free by using vegan chocolate.
