     350g Medjool dates, pitted and finely chopped
     1/3 cup boiling water
     1 ½ cups almond meal
     ½ cup natural crunchy peanut butter
     1/3 cup cocoa powder
     1 cup desiccated coconut
     ½ tsp salt
     3 glass jars, ribbon and gift tags, to package
 1. Place the dates in a large mixing bowl and pour over the boiling water. Allow to stand for 15 minutes before mixing well to form a thick paste.  2. Add in the almond meal, peanut butter, cocoa powder, ¾ of the coconut and salt to the mixing bowl and mix well to combine. If the mixture looks a little dry, add a little extra boiling water.  3. Place the extra coconut in the base of a shallow dish. Using damp hands, roll level tablespoons of the mixture into balls and then roll in coconut to coat. Refrigerate for 1 hour to firm. To package up, place eight balls in each glass jar. Tie with ribbon and a gift tag.
Christmas snowballs can be kept in an airtight container in the fridge for up to two weeks.
