Christmas Snowballs

These fuss-free snowballs are simple to make, whip them up with just one bowl and no need for a food processor! Packaged up in glass jars with a touch of red ribbon, they are great gifts to make on a budget. All the ingredients can be found at your local supermarket. Bursting with goodness, our snowballs are naturally sweetened with Medjool dates, a high-fibre superfood that adds the perfect amount of sweet caramel flavour. Plus they are rich in heart-healthy monounsaturated fats thanks to the almond meal and natural peanut butter. Rolled in a dusting of desiccated coconut, these delectable gluten-free bites are full of festive fun.

Vegetarian & Vegan Suitable, Dairy Free

Ingredients 

  • 350g Medjool dates, pitted and finely chopped

  • 1/3 cup boiling water

  • 1 ½ cups almond meal

  • ½ cup natural crunchy peanut butter

  • 1/3 cup cocoa powder

  • 1 cup desiccated coconut

  • ½ tsp salt

  • 3 glass jars, ribbon and gift tags, to package

How to make

1. Place the dates in a large mixing bowl and pour over the boiling water. Allow to stand for 15 minutes before mixing well to form a thick paste.

2. Add in the almond meal, peanut butter, cocoa powder, ¾ of the coconut and salt to the mixing bowl and mix well to combine. If the mixture looks a little dry, add a little extra boiling water.

3. Place the extra coconut in the base of a shallow dish. Using damp hands, roll level tablespoons of the mixture into balls and then roll in coconut to coat. Refrigerate for 1 hour to firm. To package up, place eight balls in each glass jar. Tie with ribbon and a gift tag.

Notes

Christmas snowballs can be kept in an airtight container in the fridge for up to two weeks.
