Gingerbread Granola

Over the festive season, we are often overwhelmed with chocolates and sweet treats, so a gift of this wholesome granola makes a great alternative, bursting with goodness from high-fibre rolled oats, nutrient-rich walnuts, almonds and heart-healthy monounsaturated fats from the almond butter. This granola is perfect to serve on Christmas morning with a side of fresh berries and yoghurt.

Ingredients 

  • ¼ cup almond butter
  • ¼ cup maple syrup
  • ½ cup apple puree
  • 2 tsp cinnamon
  • 2 tsp ground ginger
  • 2 tsp mixed spice
  • 4 cups rolled oats
  • 1 cup walnuts, roughly chopped
  • 1 cup almonds, roughly chopped

How to make

1. Preheat oven to 160°/140°C (fan forced) and lightly spray a deep roasting tray with oil.

2. In a medium bowl, combine the almond butter, maple syrup, apple puree, cinnamon, ginger and mixed spice. Stir to form a thick paste. Add in the rolled oats, walnuts and almonds. Mix until well coated.

3. Pour mixture into the tray and spread out evenly. Bake for 20 minutes, remove from oven and stir well. Return to oven and bake for a further 20 minutes, or until golden brown and crisp. Remove from oven and allow to cool.

Notes

Leftover granola can be stored in an airtight container for up to a month.
