Like most nuts, cashews provide a hefty hit of monounsaturated fats, a nutrient which has been linked to heart health. Sweetened with maple syrup, these nuts are vegan suitable and make the perfect snack to bring this social season, or wrap them up to give as little gifts. Serves 10 Prep time 10 minutes Cook time 15 minutes Ingredients 2 tsp extra virgin olive oil ¼ cup maple syrup ½ tsp ground chilli 1 tsp smoked paprika 4 cups raw, unsalted cashew nuts Sea salt flakes How to make 1. Preheat oven to 180°/160°C (fan-forced). Line a large baking tray with baking paper. 2. Whisk oil, maple syrup, chilli and paprika together in a large bowl. Add cashew nuts and toss well to coat. 3. Spread nuts onto prepared tray. Bake for 15 minutes, stirring halfway or until golden. Set aside to cool. Sprinkle over sea salt flakes to serve.. Notes The cashew nuts will be soften in the oven but harden then once cooled. Cashews can be stored in an airtight container for up to two weeks.
