Delicious picnic chocolate bar balls

Keep hangry at bay with this healthy twist on a classic snack. Recipe by Luke Hines.

Ingredients

Makes 10 balls
Prep time 5 minutes
Gluten free, Dairy Free, Vegan, Vegetarian

  • 10 medjool dates, seeds removed, soaked in boiling water for 10 mins, drained
  • ¼ cup raw cashews
  • ¼ cup desiccated coconut
  • ½ teaspoon vanilla bean powder
  • 4 tbs crushed peanuts
  • ½ cup crunchy peanut butter
  • 4 tbs cacao powder
  • 1 tsp chia seeds
  • 1 tbs maple syrup, honey or rice malt syrup
  • A pinch of salt

How to make

  1. Place the ingredients into your processor and blend until the mixture is combined but still has lots of texture

  2. Use your hands to press and shape the mixture into balls and place the balls into the fridge to set

Notes

  • Another good combination for a citrus fruit salad is mandarins, tangelos and pomelos when they are in season. Add some pomegranate seeds for a burst of colour.
  • This fruit salad can be kept, covered, in the refrigerator for up to 2 days and the flavour will improve over time.
  • If you take prescription medication, check whether you can still eat grapefruit while taking this medication (ask your pharmacist or check the information sheet inside the medication pack). Grapefruit contains a compound that can interfere with the metabolism of certain medications. If you do take a prescription drug, you can simply swap the grapefruit with mandarins, tangelos or any other fruit of your choice.
