Tofu and spring onion omelette

Ingredients

Gluten free, Dairy free, Protein rich
- 3 free-range eggs
- 6 spring onions, finely chopped
- 250g tofu, soft packet
- cracked pepper, to taste
- ¼ cup parsley, fresh, finely chopped
- Broccolini
- 1 teaspoon extra virgin olive oil
How to make
- Lightly beat eggs, then mix in spring onions and tofu to a creamy consistency. Sprinkle with pepper.
- Heat frying pan over moderate heat and add extra-virgin olive oil.
- Spoon two teaspoons of mixture into pan. Cook 2 minutes or until golden brown. Turn and cook another minute. Repeat with remaining mixture.
- Serve with steamed broccolini and/or chopped parsley
