Tofu and spring onion omelette

This low-salt, dairy and gluten-free recipe will help you kick start your morning with protein – the delicious way.

Delicious and fresh, full of protein and green veges - this one will be a great start to your day.

Ingredients

Serves 1

5 minutes

Gluten free, Dairy free, Protein rich

  • 3 free-range eggs
  • 6 spring onions, finely chopped
  • 250g tofu, soft packet
  • cracked pepper, to taste
  • ¼ cup parsley, fresh, finely chopped
  • Broccolini
  • 1 teaspoon extra virgin olive oil

How to make

  • Lightly beat eggs, then mix in spring onions and tofu to a creamy consistency. Sprinkle with pepper.
  • Heat frying pan over moderate heat and add extra-virgin olive oil.
  • Spoon two teaspoons of mixture into pan. Cook 2 minutes or until golden brown. Turn and cook another minute. Repeat with remaining mixture.
  • Serve with steamed broccolini and/or chopped parsley
