- 100g baby spinach leaves chopped
- 3 treviso radicchio, chopped
- 100g smoked ham diced
- 200g canned sweetcorn, drained
- Juice of 1 lemon, strained
- 100ml olive oil
- Salt
How to make
Put the spinach and radicchio in a salad bowl and add the ham and sweetcorn.
Put a pinch of salt in a bowl, add the lemon juice and stir to dissolve, then whisk in olive oil.
Pour the dressing over the salad and toss.
