These soft-centred chocolate puddings are the ultimate winter indulgence!

With a rich molten centre, a burst of melted strawberry chia jam, and a scoop of creamy vanilla ice cream, they’re pure decadence on a plate. But don't be fooled — these puddings are made with nourishing wholefoods that love you back.

Our homemade chia jam, crafted from sweet strawberries and chia seeds, delivers a boost of vitamin C, omega-3 fatty acids, and zinc to help support your immune system through the colder months. High-fibre almond meal, antioxidant-rich extra virgin olive oil, and quality 70% dark chocolate come together to create a dessert that’s as good for you as it is delicious.

Ingredients

  • ¼ cup extra virgin olive oil
  • 100g 70% dark chocolate, roughly chopped
  • 2 eggs
  • 1 egg yolk
  • ¼ cup coconut sugar
  • ½ cup almond meal
  • 250g strawberries, halved
  • ½ lemon, juiced
  • 2 tbsp chia seeds
  • Strawberries, raspberries, fresh mint and low-fat vanilla ice-cream to serve (if desired)

How to make

  1. Pre-heat oven to 220°C and lightly grease four 1-cup (250mL) pudding moulds.
  2. First prepare the chia jam. Place the strawberries and lemon juice in a small saucepan on low heat. Cook for 2-3 minutes to soften, then lightly mash with a fork or potato masher. Add the chia seeds and stir through, remove from heat and allow to cool.
  3. Place the olive oil and dark chocolate in a medium mixing bowl. Heat in the microwave in 30 second increments on medium power until melted. Mix well.
  4. Whisk in the eggs and egg yolk. Add in the coconut sugar, almond meal and mix to combine.
  5. Divide the batter between the four pudding moulds. Bake for 8-10 minutes or until firm on top.
  6. Remove the puddings from the oven and leave to rest for 1 minute. Transfer out of the mould onto serving plates. Top the puddings with a generous dollop of the strawberry jam. Add the fresh berries, mint and serve with a scoop of vanilla ice-cream, for ultimate melt!

Notes

  • To make this dairy-free, simply skip the ice-cream or replace with your favourite plant-based alternative. The puddings themselves are free from dairy, (just confirm the ingredients list when purchasing the dark chocolate).
