Ingredients

Cook time 15 minutes
Gluten free, Vegetarian suitable
- ¼ cup extra virgin olive oil
- 100g 70% dark chocolate, roughly chopped
- 2 eggs
- 1 egg yolk
- ¼ cup coconut sugar
- ½ cup almond meal
- 250g strawberries, halved
- ½ lemon, juiced
- 2 tbsp chia seeds
- Strawberries, raspberries, fresh mint and low-fat vanilla ice-cream to serve (if desired)
How to make
- Pre-heat oven to 220°C and lightly grease four 1-cup (250mL) pudding moulds.
- First prepare the chia jam. Place the strawberries and lemon juice in a small saucepan on low heat. Cook for 2-3 minutes to soften, then lightly mash with a fork or potato masher. Add the chia seeds and stir through, remove from heat and allow to cool.
- Place the olive oil and dark chocolate in a medium mixing bowl. Heat in the microwave in 30 second increments on medium power until melted. Mix well.
- Whisk in the eggs and egg yolk. Add in the coconut sugar, almond meal and mix to combine.
- Divide the batter between the four pudding moulds. Bake for 8-10 minutes or until firm on top.
- Remove the puddings from the oven and leave to rest for 1 minute. Transfer out of the mould onto serving plates. Top the puddings with a generous dollop of the strawberry jam. Add the fresh berries, mint and serve with a scoop of vanilla ice-cream, for ultimate melt!
Notes
- To make this dairy-free, simply skip the ice-cream or replace with your favourite plant-based alternative. The puddings themselves are free from dairy, (just confirm the ingredients list when purchasing the dark chocolate).
